Experimenting with vegetables and sliced "Stuffed Celebration Roast":




[1 cup brown lentils, picked over and rinsed
3/4 cup bulgur wheat
8 ounces cremini mushrooms, sliced
1 large onion, chopped
2/3 cup apple cider (non-alcoholic)
2 teaspoons poultry seasoning
1/4 teaspoon fine sea salt
3/4 cup quick-cooking oats
1 red bell pepper, finely diced
1/4 cup chopped fresh cilantro leaves] served with a spicy red curry sauce.

I rolled out some refrigerated Pillsbury Crescent Roll dough triangles, placed the leftover celebration roast and veggies on the triangles, rolled them him and baked them to a golden brown and served these with cilantro and parsley chimichurri made with hot red chilis........or a  spicy red curry sauce...
